3 1/2 cup almond flour (may be made in a blender or food processor, use whole almonds, either blanched or with skin on)
1 1/2 cup quinoa flour
3 eggs
1/4 cup melted butter or coconut oil
1 tsp baking soda
1 cup yogurt (homemade preferred)
1/4 tsp salt
1/2 cup honey
2 tbsp cinnamon
1/2 – 3/4 cup raisins (or currants)
Directions: Mix together in food processor, adding raisins at the very end. Put in buttered loaf pan and then bake at 350 degrees (175 C) for 1 hour, turn oven down to 300 F for an additional 15 minutes. Loaf is done when a knife inserted into the middle of the loaf comes out clean. Let the loaf cool completely before removing from pan.
