Almond Flour Cinnamon Raisin Loaf – Gluten Free

  • 3 1/2 cup almond flour (may be made in a blender or food processor, use whole almonds, either blanched or with skin on)
  • 1 1/2 cup quinoa flour
  • 3 eggs
  • 1/4 cup melted butter or coconut oil
  • 1 tsp baking soda
  • 1 cup yogurt (homemade preferred)
  • 1/4 tsp salt
  • 1/2 cup honey
  • 2 tbsp cinnamon
  • 1/2 – 3/4 cup raisins (or currants)
  • Directions: Mix together in food processor, adding raisins at the very end. Put in buttered loaf pan and then bake at 350 degrees (175 C) for 1 hour, turn oven down to 300 F for an additional 15 minutes. ¬†Loaf is done when a knife inserted into the middle of the loaf comes out clean. Let the loaf cool completely before removing from pan.
